I was thinking about a new flavored dessert that I am sure not too many people have tried. Then I thought of a common dessert that many people really like but I am going with a little twist. So here it goes: The Smoked Key Lime Pie

Smoked Key Lime Pie with a Famous Rory Ricord Whiskey*

Whipped Cream Topping

Smoked Key Lime Pie (makes 2 pies):

Ingredients:

  • 2 9″ Graham Cracker Pie Crusts
  • 3 14oz cans of Sweet Condensed Milk
  • 9 Egg Yolks
  • 1 1/2 Cups Nellie and Joe’s Key West Lime Juice
  1. If you are using a smoker Stabilize it to 325-235° F. (If you don’t have a smoker use your oven. You just won’t have a smokey flavor). Set up your smoker for an indirect cook with your deflector shields. Set your grates to the top setting.
  2. Combine sweetened condensed milk and egg yolks. Whip until fully incorporated, then slowly pour in Key West Lime Juice while continuing to whip. Once incorporated set aside.
  3. Pour filling into pie crusts and place on the smoker grates and bake for 15 minutes with the lid down. Allow to rest for 10 minutes (very important to prevent concaving) before refrigerating. Keep in the refrigerator overnight.
  4. Zest the lime over a slice of pie
  5. Top with the Famous Rory Ricord Whiskey*Whipped Cream and a twist of lime.

Garnish:

  • Famous Rory Ricord Whiskey* Whipped Cream (See Below)
  • Lime Zest
  • Thin Lime Slices

The Famous Rory Ricord Whiskey* Whipped Cream Recipe

  • 1 1/2 Cups cold Heavy Cream
  • 3 Tbsp Powdered Sugar
  • 1/2 tsp Pure Vanilla Extract
  • 2 tsp of Famous Rory Ricord Whiskey*

Famous Rory Ricord Whiskey* Whipped Cream Instructions:

  • In a mixing bowl, pour in your heavy cream. Whip vigorously to incorporate air.
  • When you reach a soft peak, add sugar, Famous Rory Ricord Whiskey*, and vanilla extract.
  • Continue to whisk until you reach a stiff peak.

I paired this Limy dessert with a 2016 More Than Muse Sauvignon Blanc, Delicious. It Amplifies the smokiness and tones down the lime. Great Stuff.
