Red Chile Enchilada Sauce
Obviously, if you love Mexican food you should try this Red Chile Enchilada sauce recipe! Because we here in New Mexico we make our Red Chile Enchiladas a little bit different than most of you make. Clearly this is an acquired taste and most New Mexicans like to have their Red Chile Hot. So if you are not used to having HOT Chile, you can always use mild. Be advised this is NOT TEX_MEX.
So there are a couple of ways to make enchiladas. By rolling the tortilla or layering them flat. I like to have mine flat and stacked like pancakes. My wife likes to have hers rolled in a tube. I Like flat enchiladas, it seems like you get more than the rolled but to each his own.
The Sauce for your Red Chile Enchiladas
The Ingredients:
- 2 Garlic Cloves minced
- 5 Tbs ground Red Chile
- 2 cups Chicken Stock
- 2 Tbs Cooking Oil
- 1/4 tsp Cumin
- 2 tsp Oregano
- 2 Tbs Flour
- Salt to taste
- 1 dash Red Wine Vinegar
- 1 tsp Sugar (optional) cuts the bitterness
First off sauté Garlic in Oil, secondly, add flour and brown by pressing flat in skillet. Slowly add liquid and Chile and the remaining ingredients. Stir and simmer. Of course, you can add Sautéed Pork or ground beef for a heartier meal.
Flat or rolled Enchiladas
Whether you are layering or rolling the tortillas; first off is to soft fry the corn tortillas in hot oil. I usually do a 4-5 layer enchilada and my wife does 4-5 rolled.
For Flat: Add 1 corn tortilla, cheese, red Chile, 1 tortilla, cheese, red Chile, repeat for 4 layers. Top layer red Chile, cheese, chopped green onions, fried over-easy egg, and red chile sauce.
Similarly for Rolling method: roll 4-5 tortillas individually with cheese in the middle. After stuffing your tortilla rolls then cover in cheese, red Chile and cut green onions.
