Pastalitos or Empanaditas as some people call them are a crust that is filled with a fruit filling. Some people put a cream filling. Further, Some people even use a meat filling. My version is filled with Apricots but you could use any type of fruit filling.
First, we will start with the filling.
Ingredients:
- 3 cups sugar
- 1/4 tsp. cloves powdered
- 2 tsp. alspice
- 1/2 tsp. nutmeg
- 3 tsp. cinnamon
- 4 pkgs Dryed Apricots, (Any type of dryed berry or dryed apples)
Prepare Filling:
In a pot of water put the 4 packages of apricots and boil until the apricots are soft and tender. Make sure the water is always covering about 1/2″ above the fruit. In a blender puree the apricots. Add the rest of the ingredients and blend. Set aside.
Second, we now do the Pastalitos:
Ingredients:
- 3 cups flour
- 1 tsp. salt
- 3/4 cup baking powder
- 1 cup butter or margarine
- 6-8 Tablespoons cold water
- 1 egg
Prepare the dough:
Mix and sift dry ingredients. Cut in butter until mixture is coarse, like meal. Add only enough water to bind together. Divide into handful sizes of dough and roll in a circular shape (Flat about 1/8 inch thick.) Fold dough over 1/4 of the way and cut vent holes. Pull forward another 1/2″ and cut more vent holes. Open our circle flat and fill 1/2 side with apricot filling fold-over pie filling and seal shut. Use a fork or your fingers to seal shut. You should now have half of a pie.
Depending on the size of the half pie make knife crease marks about 2″ apart. Sprinkle lightly with sugar, Place on a cookie sheet, and bake until golden brown. The oven is at 425° and bake until golden brown. About 12 minutes. Caution: they will burn fast.
Take out of the oven and let cool, Cut into a cookie and a half size. ENJOY!!
