Here are some New Mexico Recipes for you. If you are not from New Mexico you may not understand our obsession with Red and Green Chile. Yes, that is the way we spell Chile in New Mexico. Red and Green, and sometimes what we call Christmas (a mixture of both) is a lifestyle here in New Mexico. I would say that about 85-90 percent of New Mexicans eat Red or Green chile at every meal every day. If you would like to try this recipe then get it here. This is not TEXMEX. I will be adding more recipes as time goes on. Sometimes we make special dishes for the Christmas Season but a lot of them we serve at all times of the year.
Did you know that New Mexico has a State Question? When you enjoy a restaurant here in New Mexico you might be asked a question, and that question is “Red, Green, or Christmas?” If you like Red Chile, you say “Red”. Now if you like Green Chile, you say “Green”. And if you like a mixture of red and green combined, you say “Christmas”.
New Mexico Recipes – Main Dishes
Chile Rellenos: This is not your typical Chile Rellenos. Some people call these Sapos. Little fried chile balls full of flavor.
Green Chile Chicken Enchiladas: These are still enchiladas but with a whole different flavor. Kinda Made the same as Red but not really.
Red Chile Enchiladas: Here is the simplest way to make Red Enchiladas NM Style. Flat or rolled we have both was to make them here.
Posole: Here is a traditional New Mexican dish that I know you will love. I eat this dish by the gallon and so does all of my family.
New Mexico Recipes – Cookies and Deserts
Bizcochitos: Are traditional New Mexican cookies that are enjoyed by all that taste them. We usually have them around the holidays but I know people that eat them all year round.
Chile Rellenos or Sapos: Chile Rellenos (some call them Sapos) are a hand-sized Sweet, hot, nutty little ball of fun. I think you will enjoy them all year round. And you can store them in the freezer and thaw and eat at any time. Best eaten hot.
Pastalitos: Are fruit-filled pies. These little pies are delicious and you can never have too many of them. Give yourself a treat and try these any time of year.
Pineapple Cheese Casserole: Everyone says that this is a “Southern” recipe, however, we love it just the same as here in New Mexico
Smoked Key Lime Pie: This isn’t a traditional New Mexico Dessert but I thought I would include it as it is so good I couldn’t leave it out.
