Chile Rellenos (some call them Sapos) are a hand-sized Sweet, hot, nutty little ball of fun. I think you will enjoy them all year round. And you can store them in the freezer and thaw and eat at any time. Best eaten hot.

This isn’t your traditional Chile Rellenos. The recipe doesn’t really sound right, and some people call them sapos or little frogs. I remember being small and when my mom gave one to me, naturally I asked what was in it and I gave it right back to her and said, “No Thanks”. My mom said, “you’ll be sorry.” Then when I was about 16 my mom said that I at least need to try them. So I did, and I started to cry because they were so good. I missed all those years of not eating them. Now I make them every year.

Ingredients:

Chile Rellenos
  • 2 pounds round steak or ground chuck
  • 1 pound pork boneless roast
  • 1 pound dry green chile that has been dryed
  • One cup rasins
  • 2 cups sugar
  • 1 tsp. nutmeg
  • One tsp. cinnamon
  • 1 tsp. cloves powdered
  • 3 eggs & 3 more eggs seperate
  • 3/4 cup pinon nuts (Pine Nuts)

Putting the Chile Rellenos together:

The day or two before, Use your dehydrator to dry the chili. Make sure it is completely dry. The reason you dry and rehydrate is to control the moisture content of the chile. You only want your chili to be pliable not drenched in water.

Boil beef and pork together until very tender. While meat is cooking soak green chile in cold water until tender. Firstly, remove seeds from chile and drain. After the meat is well cooked and cool grind it with chile, raisins, and nuts. Add sugar and spices. Mix well. Secondly, Shape into meatballs or egg shape. Roll in flour and dip into egg. (Beat 3 egg whites until stiff) then add the yolks. Dip each meatball into the batter and fry in hot shortening until golden brown (375°)

If you can get green chile whole that has been roasted: Dry chile in a food dehydrator overnight.

But, If you cannot get whole green chile, you can get the BUENO diced green chile at your supermarket. Be sure to drain as much water as you can.
